Trofie Pesto Pasta

TROFIE!!!

When I was in New York this past month my cousin introduced me to Trofie pasta. It was a fresh bag that she had just brought back with her from Italy.

She served it with pesto and we ate it with a glass of Proseco by the pool.

Needless to say I fell in love and Amazoned Trofie pasta right after.

When the pasta arrived yesterday in the mail it was like Christmas! My roommate and I automatically wanted to play with our new toy and make the pasta then and there.

Which we did.

We ran to Sprouts (a healthy grocery store) got our ingredients for pesto and made some magic happen.

Note to those who make this … we are garlic LOVERS and use a lot of it.

So use as much, or as little as you want.

:: Ingredients ::

2 cups of Basil

1/3 cup of Pine Nuts

5 tsp of minced Garlic

2 tsp of Garlic Powder

1/4 cup of Parmesan Cheese

1/4 cup of Pecorino Romano

5 tbsp of Olive Oil (or more)

Salt and Pepper (to taste)

:: Instructions ::

Step 1 – Wash and trim off the stems of the basil

Step 2 – Place basil and pine nuts in the food processor.

Pulse until finely chopped

 Step 3 – Then blend in both garlics and cheeses

Step 4 – Pulse olive oil, salt and pepper into mix.

(if it looks to dry add more olive oil)

Step 5 – Cook pasta until al dente

Step 6 – Add pesto into drained noodles and add Parmesan Cheese on top

:: Spice it Up :: Added extra basil and diced cherry tomatoes on top!!
