I am a nut about ginger tea, and I have never made these cookies for some odd reason until now. All I have to say is that they are delicious!
:: Ingredients ::
3/4 cup Butter (room temperature)
1 1/2 cups Sugar
1/4 cup Honey
1 egg (room temperature)
2 cups Flour
2 tsp Baking Soda
1 tsp Ground Cinnamon
3 tsp Freshly Grated Ginger
1/4 cup Extra Sugar for rolling
:: Instructions ::
Step 1 – Cream butter until pale white
Step 2 -One at a time add the sugar, honey and egg
Step 3 – In a separate bowl mix the dry ingredients together. (flour, baking soda, and cinnamon)
Step 4 – Add freshly grated ginger to the butter mixture
Step 5 – Little by little add the flour mixture to the butter mixture until well combine
Step 6 – Preheat oven 350 degrees
Step 7 – Roll into golf size balls of dough and then roll in the ‘extra sugar’ for dusting
Step 8 – Place on a nonstick cookie sheet and bake in oven for 8-10 minutes, or until the cookies have raised and flatten to golden color
Step 9 – Place on drying rack and when cool enjoy with milk, coffee or tea!!
