Butternut Squash Pasta

:: Ingredients ::

Olive Oil

Large Butternut Squash (cubed)

1 Large Onion

5 Cloves of Garlic

1 cup Tomatoes (chopped)

Sauce

1/2 tsp Chili Flakes

1/2 tsp Oregano

1/2 tsp Paprika

1/2 cup Milk

1 cup Pasta Water

1/2 cup Parmesan Cheese

*2 TBSP Mike’s Hot Honey* OPTIONAL

Pasta

1 Trottole Pasta (16 oz bag)

:: Instructions ::

Step 1 – Preheat oven 375 degrees

Step 2 – Chop and skin butternut squash, onions, garlic and tomatoes

Step 3- Place veggies on a baking sheet, sprinkle olive oil and mix around on pan

Step 4 – Cook for 45 minutes

Step 5 – Cook Pasta accordingly to bag, before straining pasta measure 1 cup of pasta water and set aside

Step 6 – When the veggies are done scoop them into a pot, add pasta water, milk and liquify with hand blender

Step 7 – Add the chili flakes, oregano, paprika, salt, pepper and parmesan cheese

Step 8 – Fold in the pasta to the pasta sauce

Step 9 – OPTIONAL – Add 2 TBSP of Mike’s Hot Honey if you want a hint of spice and sweetness

Step 10 – Garnish with more parmesan cheese AND ENJOY!
