This is a go-to recipe for me, and something I have constantly made since I first moved out of my parents’ house.
The ingredients are simple, and it is easy to make.
:: Ingredients ::
3 large garlic cloves (minced)
1/2 a large onion (chopped)
4 tbsp olive oil
2 cups lentils
4 cups water
1 tbsp ginger minced
1 large, sweet potato (cubed)
2 medium carrots (cubed)
1/2 cups tomato sauce
2 tsp salt
1 tsp pepper
:: Instructions ::
Step 1 – Place the minced garlic, chopped onions and olive oil in pot over medium heat
Step 2 – When the onions and garlic are golden brown add in the lentils and water
Step 3 – Add the rest of the ingredients to the pot
Step 4 – Bring to a boil and lower heat to low
Step 5 – Let it simmering for 40 minutes or until potatoes and lentils are fully cooked
(add a 1/4 cup of water if it looks dry)
Place lentils over rice, blend them or eat them by themselves.
If you want to spice it up even more add a fried egg and/or avocado on top before serving.
